The color is a beautiful, dark ruby with slight accents of violet. The nose just screams Cabernet, with aromas of ripe plum, black cherry, and black olives bursting forth from the glass. The mouthfeel is enormous, and complex flavors of black raspberry, anise, leather and olives intermingle gracefully with well balanced tannins and acidity. A real treat! The finish is long and luxurious and lasts well into the next sip.
95% of the grapes for this wine were grown on the highly regarded Hammersky Vineyard, located in the west hills of the Paso Robles appellation. The Cab Franc was also grown on the west side of the appellation, albeit on a different vineyard. Aged 22 months in American, French, and Hungarian oak barrels, 25% new. Production focus was on extended skin contact to maximize extraction and flavor.
This wine will pair well with a wide variety of foods, including the traditional Filet Mignon. Drink now, or age 3-7 years for maximum enjoyment.
